Majorero cheese (majorero stems from Maxorata, name that the island of Fuerteventura received in ancient times) is a delight that comes from traditional grazing of majorera goats, with Registered Designation of Origin seal since 1999. It was the first cheese from The Canary Islands to receive such seal and the first goat cheese in Spain.
It is made with goat milk following the more traditional method; it is cylindrical in shape, weighing 1-6 kilos. Its creamy texture and its acidulous, slightly spicy flavour surprise the most demanding palates, as it keeps the undisputed taste of its cheese-making tradition.
According to the ripening process three types of majorero cheese can be found: mild, semi-cured and cured. Moreover, the cheese can be smeared in different ways: with oil, paprika or gofio, giving way to all the varieties that the designation of origin allows, all of them being true delights.
The majorera goat
The majorera goat is a unique breed with its own characteristics. It is a rustic wild and very strong species that produces a dense and fat milk. The majorera goat is recognized as one of the most productive in the world.
